Recipe 1
Red Amaranth With Garlic And Oyster Sauce
This can be prepared in a jiffy and will surely leave you licking your fingers!
Start the process by washing 1 bunch of red amaranth and shake it dry. Discard away lower stems that are hard. Now pick leaves and cut tender stems into bite-sized pieces.After this heat 2 tbsps of oil in a wok and fry 1 tsp of crushed garlic on low flame. Stir this until it turns pale golden. Add the amaranth to this and increase heat to medium and toss around the leaves with a spatula till they become limp.Add 2tbsps of oyster sauce and 2 tsps of sugar to it and cover it with a lid . Allow this to steam for about a minute or two. Meanwhile, combine 2tsps of cornflour with 2 tablespoons of cold water in a small bowl. Stir into liquid in pan until it boils and thickens. Serve at once with steamed rice!

Spicy Amaranth
This will appeal to people with spicy tastebuds! Not only is this tasty, but it is also extremely simple to prepare!
Start by washing 1 pound of red amaranth well, discarding any tough stalk ends, and tear into large pieces.Now heat the oil in a wok, add 1 clove of garlic, 1tsp minced ginger ,1 tsp of ground cumin, 1/2 tsp of ground coriander 1/2 tsp of ground cloves
1/2 tsp of ground cardamon,2 tbsps of vegetable oil, 1 small jalapeno and toss them all for about 10 seconds. Add the other spices and stir for several more seconds, then add the amaranth, 1 tsp of salt, 1tbsp of lime juice, and 2 tablespoons of water. Stir fry until the amaranth starts to wilt. Remove from heat and serve.

Tambdi Bhaji
Perfectly nutritious and Perfectly Goan! You can prepare this at home and feel like you are in Goa!Roti and Rice both complement this!
Start by rinsing 250 gms of Red Amaranth leaves with water and draining them. Chop them finely and keep them aside. In a pan heat 2tbsp of oil add 1 medium finely chopped onion, 1-2 green chillies,3-4 cloves of garlic, and stir the mixture well till the onions become translucent. Now add 1/4tsp of turmeric powder and stir well followed by adding the chopped amaranth leaves. Add salt to taste and stir again. Cover the pan and allow this to cook on a low flame for a while. In case the water dries up, add 1/4 or 1/3 cup of water and stir more till the amaranth leaves are softened and cooked well. This takes about 10-12 minutes. Now add 1/3 cup of grated coconut, stir well and cook on a low flame for about 2-3 minutes.
Serve tambdi bhaji as a side dish with dal-rice or with chapatis or bread.
