Zucchini is considered to be an exotic vegetable and is seen as a part of gourmet food. It adds great taste to stir-fries. baked treats and mains. Its subtle flavor combines well with other ingredients of many dishes. It is available in two types – long slender squash and stout plump squash. Before talking about the recipes of zucchini, we will talk about the health benefits that it has to offer.

Zucchini Loaf

After this add 300 g shredded zucchini, 300 g plain flour, 1 Tbsp ground cinnamon, 1 Tbsp ground cinnamon, 1 Tsp baking powder, 1 Tsp baking soda, 1 Tsp salt and 50 gms of walnuts. Mix this well.
Finally, place the mixture in the loaf tins in the centre of the oven and bake for 60-70 minutes. Your zucchini load is ready!

Zucchini Fritters
They are incredibly easy to make and are low on calories.
Start the process by washing zucchini and trim off ends. After this grate it. Now place zucchini in a large mixing bowl, stir in 1 tsp salt and set aside for 10 minutes.
After 10 minutes, squeeze handfuls of zucchini tightly over the sink to remove extra water. It is impressive how much water comes out! You should end up with 3 and a 1/2 to 4 cups of squeezed dry zucchini. Transfer to a large mixing bowl.
Now add 1/2 cups chopped green onion and 2 lightly beaten eggs.
In a small bowl, stir together 1 cup flour with 1 tsp baking powder, 1/2 tsp salt and 1/2 tsp black pepper, or season to taste. Add flour mixture into zucchini mixture and stir until well combined.
Place a large heavy bottomed cast iron or non-stick skillet over medium-high heat*. Add 2 Tbsp olive oil over medium-high heat. Once the oil is hot, add the zucchini mixture a heaping tablespoon at a time.
After this flatten out the tops slightly to make them pancake shaped. Sauté 3-5 minutes per side or until golden brown. If they brown too quickly, reduce the heat. Serve warm with a dollop of sour cream.

Zucchini Wrapped Sole
Take 120 gms of sole fish and cut it into cubes of 2X2 inches each. Now take thin slices of 60 gms zucchini and grill them with salt and pepper.
Once the zucchini is grilled, wrap it around the sole fish. Sprinkle it with 40 gm thyme, salt and pepper. (according to taste)
Then bake it in the oven at 180 degree Celsius for about 10 minutes, so that the fish is cooked through.
Take a plate and brush it with 20gm Kasundi mustard and then place either fried potato or make potato spaghetti using a spaghetti maker.
Once the bed is set, place your zucchini wrapped sole on top and garnish it with fried onion(60gm) crisps.

Zucchini And Turnip Soup
A detoxifying soup with healthy ingredients like zucchini and turnip!
In a pan add a little bit of water about 1/4 cup.To this add 2Tbsp onions and 1 Tbsp garlic.Let them saute in the water for a few minutes till it starts leaving a nice aroma. Now add 1 cup of turnip. Cover it and let it cook for about 5 minutes.
After 5 minutes uncover and add a cup of zucchini. Now add some vegetable stock. Once the vegetables become soft and tender add a handful of chopped spinach. Add a little more stock to adjust the consistency. Add1/2 Tbsp ginger, lemon juice (1/2 lemon), and salt(to taste).Mix well. When the veggies are cooked enough puree it in a blender. Leave some veggies and stock in the pan. Add the puree back to the pan of veggies. Heat it and serve. Garnish with chopped coriander and black pepper.
