Recipes of coriander
Coriander curd rice recipe
This works wonders for summers. A cold bowl of rice laced with coriander is both yummy and light for the tummy.
Start the process by mixing together 3 cups of steamed rice,1 cup of fresh curd and salt to taste. Blend this in a mixer to make a rough purée.
Now heat 2 Tbsp of ghee in a small katori and add 1 Tsp of mustard seeds.
When the seeds crackle, add 2 Tsp urad dal, 1 dry red chilli and 1/4 Tsp hing. Add this to the mashed rice curd mixture. Finally, add some more salt and 1/4 cup finely chopped coriander and mix well.
Serve cold.
Coriander cutlets
These cutlets are perfect for an evening snack. The recipe is very easy.
Start the process by thoroughly rinsing a bunch of coriander leaves and chop them finely.
Now in a plate, take the coriander leave, a cup of gram flour, 1/2 Tsp of cumin seeds, 1 Tsp of chilli powder, 1/2 Tsp of garam masala and salt to taste.
Blend all the ingredients gently by hand and make it into a dough. Add some more flour if required and give the dough the shape of a roll.
Cut the dough into thin slices and shallow fry them.
