Recipe 1
Gajar Ka Halwa
This is a recipe very dear to our heart. Cooked in desi ghee and laced with cinnamon, cardamom and sugar, this dish serves as a permanent desert item in winters.
Read below to make Gajar Ka Halwa.
Start the process by grating 1 and a 1/ kg carrots and put in a pot on medium heat. Stir-fry continuously till all the water is evaporated. Now put 10 green cardamoms, 2 cinnamon sticks and 500 gms of sugar and cook for a while. Add about 250 gms of desi ghee and cook for 5-7 minutes more.Finally, add 400 g condensed milk (you can use

Gajar Ka Achaar
This is one of the most famous Punjabi dishes and is made frequently during winter. It is tangy to taste and easy to make. Read the recipe below.
Start the process by peeling 250 gms of carrots and cut them into finger size. Now take 3 Tbsp of powdered mustard seeds, 1 Tbsp of salt, 1 Tbsp of chilli powder and 1/2 cup mustard oil and mix them all properly. Put the mixture into a clean jar with a tight lid. Leave in the sun for about a week and shake the bottle once a day to mix well. Your tangy achaar is ready!

Gajar Ki Kanji

Start the process by peeling 250 gms of carrots (preferably the dark variety called kaali gajar) and cut them into finger size. Now boil about 6 cups of water and add the carrots to it. When the water comes to a boil again, switch off the flame and allow it to cool.
Add 2 Tbsps of salt and 3 Tbsps of mustard powder to it, and transfer into a jar with a lid, and keep this in the sun, to mature. In summers or sunny weather, it takes 3-4 days, for the taste of the mustard to become strong. Do not keep the jar in the sun, after it is ready.
