A close kin to broccoli, cauliflower is one vegetable that is often overlooked by its cousin’s glories. However, cauliflower is not to be sidelined and should be looked as the leading star because of its numerous experiments in the culinary realms.
Cauliflower is a regular face in gourmet menus and is usually all spiced up with fancy sauces, and bold textures.
Benefits of Cauliflower
Cauliflower is a storehouse for innumerable health benefits. It contains sulforaphane that can actively kill the nasty cells of cancer and also aids in balancing levels of blood pressure and functions of the kidney.
It has Vitamin B that plays an active role in brain development followed by Vitamin C that acts as a strong antioxidant. Like cabbage, cauliflower also has richness in fiber and hence supplies good health to the digestive tract.
I am writing down certain recipes that you would surely devour!
Recipe 1
.Bharwa Gobhi
This is a filling meal and is a dish that would appeal to our taste buds.
Start by taking a pan full of hot water and add salt, turmeric, and 4 medium-sized florets of cauliflower. Blanch this mix until the gobhi is tender
Now for making the batter mix 350 gm of besan, 1 Tbsp of ajwain, 2 Tbsp of garlic, Salt, to taste, red chili powder and add enough water to get a thick consistency. For preparing the filling, add 1/2 cup of processed cheese (grated), 10-15 raisins, 2-3 Tbsp of fresh, pomegranate, 2-3 Tbsp of chopped cashews, a handful of chopped coriander leaves, 2 Tbsp of finely chopped ginger,4 Tbsp of crumbled khoya and use your hands to make a soft , gooey mix.
After this stuff the blanched gobhi with this mixture and coat the stuffed gobhi in the batter. Deep fry this till it turns golden in color. Serve hot.
Recipe 2
Honey Cauliflower
Creamy corn flour batter combined with seasoning, zesty sauce, and fried cauliflower florets is a treat to the eyes and tummy both.
Start the process by heating the oil in a pan. Now add grated garlic, 2 Tsp of red chili sauce, 2 Tsp of green chili sauce, 4 Tbsps of tomato sauce and toss this mix well on a medium flame.
For preparing the honey sauce, add 1 Tsp of lime juice, salt to taste, 2 Tsp of soy sauce, 1 Tsp of Vinegar, 2 Tbsp of honey and give it a stir. Your honey sauce is ready.
Combine 1 Tbsp of Plain flour, 4 Tbsps of cornflour, 1 Tsp of Soy Sauce, 4 Tsp of Ginger-garlic paste, water and salt to taste; to make a thick batter and keep it aside. Dip 1 cup of cauliflower florets in the prepared batter and deep-fry it till it turns golden brown from all the sides. Remove on an oil absorbent paper and keep aside.
Now heat 1 tbsp of oil in a deep saucepan and add white sesame, honey sauce and fried cauliflower florets, mix well and cook for 2-3 minutes. Serve hot.
Recipe 3
Corn & Cauliflower Soup
This soup is thick and creamy in texture and is simply delicious. Try the recipe out as it is very simple.
Start the process by taking a pan and add some olive oil. Add in the sliced onions and stir it well. Then add 4-5 cloves of garlic,1 finely diced onion 2 finely chopped cauliflower florets and cook for about 2 to 3 minutes. Now put in 1 Tbsp of cashew nut paste and mix it well. Then add 1 cup of corn and 2 glasses of water and cover the pan with a lid. Let it cook it on medium flame and then once it is done, allow it to cool. Pour it into a blender and drop in the slice of bread and blend till you get a smooth paste.
Now transfer the paste into a deep pan. Lower the flame to medium and add milk, 1/2 Tsp of black pepper powder, fresh cream, 1 Tsp of sugar and salt as per taste. Bring to boil. Garnish with crushed corn and serve.
