Radish has a crunchy texture and is packed with lots of health benefits. Radishes are available round the year but also dominates as a popular vegetable in the winter season in many households.
It grows in many different shapes, sizes, and colors such as pale white, yellow, pink, deep red and purple.
The flavor of it is quite exquisite and all its body parts can be used to create a wide range of tasty edibles.
Benefits of Radish
Consuming radish regularly is a boon to our health and well-being. This is loaded with antioxidants and nutrients that can treat and manage many illnesses like flu, cancer, and jaundice. Vitamin C, potassium, folic acid are also found in abundance in this vegetable. Its fibrous properties help in easy digestion. And its cleansing nature steers clear the toxins present in the liver thus rendering a healthy liver functioning.
Recipe 1
Mooli Wala Meat Recipe
This is a finger-licking recipe. This has spices in abundance and tastes best when combined with steamed rice. The process is not cumbersome at all.
Start by pre-cooking 1 kg of mutton (thoroughly cleaned ) with whole spices(2 brown cardamoms, 6-8 cloves, 6-8 peppercorns, 2 sticks of cassia/cinnamon, 3-4 green cardamom) and water(2 cups) in a pressure cooker, for about 20 minutes.
Now use a second pan and dry roast the 1Tbsp of saunf, 1 Tsp of cumin and coriander seeds. After that grind them and keep aside.
Heat 1/2 cup of mustard oil in a deep vessel. Then mix a pinch of heeng powder with a dash of water and add to the oil.
Now mix the salt, 1 Tsp of dry ginger powder, 1 Tsp of turmeric powder, 2 Tsp of red chili powder in a dash water and add this to the oil. Stir this mixture well and add the freshly ground spices to the cooking masala. Continue stirring for a minute to avoid any lumps.
Add the pre-cooked meat along with the stock. Mix in the radish(2 chopped) and add salt to taste. Cover the pan and cook for an hour on a low flame or till the meat is tender.
Serve hot with rice.
Recipe 2
Melon Balls With Rocket And Radish Recipe
This takes literally 20 minutes to get made. It’s easy to prepare and light for the tummy. It is a boon for all calorie conscious people.
Start by adding lime juice(1 lemon),1 Tsp of honey,2 Tbsp of extra virgin olive oil,1 Tsp of minced ginger,1 1/2 Tsp of chopped chive greens and salt to taste in a bowl. Mix it and let it rest in the fridge for 10 to 15 minutes.
Your dressing is ready.
Now slice the melons(watermelon and muskmelon) into half and remove the seeds. Scoop out the fruit into small balls. Now use a peeler to peel out thin slices of radish(half). Add the radish in a bowl with the melon balls, dressing, 1 chopped fennel bulb, 1 cup of rocket and a few mint leaves.
Serve this cold.
Recipe 3
Mooli Ke Paranthe
After a light meal, I want to add a recipe that is super-filling and satisfies our Indian Genes.
Start the process by breaking the dough(2 cups of whole wheat flour) into small pieces, shape into round balls and flatten it.
Now pinch the edges to form a cup, and place some radish(2 cups grated) mixture in the center. Moisten the edges and bring them together to close the filling. Pinch to seal the ball properly. Roll this stuffed ball to smoothen, dip in dry flour followed by rolling so that it flattens and becomes thin. Make sure you do not tear it while during the thinning process.
Heat the Tawa(frying pan) on a high flame till it gets hot. After this place the parantha over it. When its edges are dry enough to be lifted, take some ghee and make a trail along the edge of the parantha.
Heat till it gets brown in color on both sides. After this gets done, its ready to be served.
Recipe 4
Mooli Ki Bhurji
Cooking this is zero hassle and lots of fun. Read below to understand how:)
Wash the radish leaves(2 large radishes) well and chop them finely. Now scrape the radish, wash and chop them finely.
Then heat 2 Tbsp of mustard oil and add 1/8 Tsp of asafoetida and 1 Tsp of cumin seeds.
When they begin to splutter, add the chopped radish, salt(according to taste), 1/2 Tsp of sugar and 1Tsp of chili powder.
Stir-fry till the leaves slightly wilt. But do not let them wilt completely, the crunchiness needs to be there.
Your Mooli Bhurji is ready to be served hot!
Recipe 5
Mooli Ki Chutney
This tastes amazing with piping hot food!
Grate the radish(1) and squeeze it lightly to remove the excess water content.In a bowl mix 9-10 walnuts, 5 Tbsp hung curd,1 green chilli together,1 tsp chopped coriander leaves and salt to taste
Store it in the fridge. Serve the chutney chilled.
Recipe 6
Pineapple and Mooli Kachumbar
A quick salad with many hydrating elements perfect for scorching summers.
Cut 1/2 pineapple into thin slices. Then chop 1 red radish and 1 onion in circular disk shapes. Chop 1 cucumber in long slices and mix all the fruits and vegetables in a bowl. Add the dressing of 2 tbsp lemon juice, 2 tbsp olive oil, 2 green chillies, 1 tsp chaat masala, black salt(according to taste) to the vegetables. Toss it well and serve.
Recipe 7
Radish and Beetroot Salad
This salad is easy to make and contains the healthiness of root vegetables like radish and beetroot.
To make the Indian Radish and Beetroot Salad Recipe, grate 2 radishes, 2 carrots and 2 beetroots and keep them ready.
Transfer these grated vegetables-radishes, carrots and beetroots into a mixing bowl, along with 3 tbsps peanuts, 1 green chilies, 2 tsps lemon juice and salt(According to taste). Toss well and serve.
